All American Fingerling Potato Salad


  • 1-2 bags of chopped fingerling potatoes
  • 1 TBS of olive oil
  • 4 finely diced stalks of celery
  • 1/4 cup of chopped red onion
  • 3 TBS of organic vegan mayo
  • 2 TBS of spicy brown mustard of your choice
  • 2 TBS of organic sweet relish
  • 1/4 cup of finely chopped dill
  • 1/4 cup of finely chopped parsley
  • generous amounts of himalayon salt & ground pepper

Preheat the oven to 400 degrees. Coat chopped potatoes with a little olive & salt and pepper, place on a tin foil lined sheet in the oven. Cook for 30-40 min until tender and place in bowl in the fridge until cool.

In a separate bowl place remaining ingredients. Mix in cooled potatoes and place in fridge until ready to serve, and enjoyl
