Parmesan Brussel Sprout Flatbread


Flatbread & Toppings:

  • Your favorite pizza dough (homemade is best with or without gluten)
  • 8-10 brussel sprouts shaved or chopped thinly
  • 1/4 cup of sliced red onion
  • Vegan cheese such as Miyokos Creamery Mozzarella or Gusto Grating Cheese
  • 1 TBS of chopped fresh rosemary
  • Salt & Pepper
  • Homemade vegan parmesan*

*Vegan Parmesan:

  • 2 cloves of garlic
  • 1/2 cup of cashews (or any nut of your choice-pecans work very well too)
  • 1/2 cup of nutritional yeast
  • Salt & pepper

Blend all parmesan ingredients in a blender or food processor and set aside.  

Prepare your dough 30-60 minutes ahead of time or purchase store bought if you are in a time constraint. Preheat your oven to 450 or put you're Breville Pizza Maker to the thin crust setting.

Cook your sliced brussel sprouts and onions over the stove with a little olive oil and salt and pepper at medium heat. Don't fully cook, and set aside.

Roll out your dough with a sprinkle of flour- slightly thinner than you would regular pizza for flatbread style. Cover dough in your choice of vegan cheese first, then place brussel sprouts and onions on top. Sprinkle with chopped rosemary and place in your oven.

Cook time should be maximum of 10 minutes so keep checking your flatbread since everyone's oven is different. Pull out as soon as cheese and crust has slightly browned

Sprinkle your homemade vegan parmesan on top, option to drizzle with balsamic glaze- slice up, and serve warm.
